Spicy Vegetable and Bean Soup
Ingredients
- 1 x 425 gram can black beans
- 1 x 425 gram can kidney beans
- 4 tablespoons Sour cream
- 2 stems Shallots
- 800 grams canned tomatoes
- 1/2 teaspoon ground cinnamon
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 4 garlic cloves
- 1 medium sweet potato
- 1 medium potato
- 1 red onion
- 1 green capsicum
- 1 red capsicum
- 2 cups vegetable stock
Methods
- Chop your capsicums, onion, potato and sweet potato, into 1 cm cube. Add finely diced garlic and a tablespoon of olive oil. Cook for 5 minutes on medium heat.
- Add the canned tomatoes, vegetable stock, beans and spices
- Cover and simmer on low heat for 40 minutes
- Serves with a tablespoon of sour cream and diced shallots
