Nutritional Notes:

Spicy Vegetable and Bean soup is a healthy vegetarian weight loss recipe. Containing a moderate amount of vegetables and beans means the resultant fibre intake is 13.6 grams per serve. The meal provides a good source of low GI carbohydrates whilst containing a low 330 kj's per 100 grams. You can eat this one to you're hearts content, a 87 out of 100

Spicy Vegetable and Bean Soup

Ingredients

  • 1 x 425 gram can black beans
  • 1 x 425 gram can kidney beans
  • 4 tablespoons Sour cream
  • 2 stems Shallots
  • 800 grams canned tomatoes
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 4 garlic cloves
  • 1 medium sweet potato
  • 1 medium potato
  • 1 red onion
  • 1 green capsicum
  • 1 red capsicum
  • 2 cups vegetable stock

Methods

  • Chop your capsicums, onion, potato and sweet potato, into 1 cm cube. Add finely diced garlic and a tablespoon of olive oil. Cook for 5 minutes on medium heat. 
  • Add the canned tomatoes, vegetable stock, beans and spices
  • Cover and simmer on low heat for 40 minutes
  • Serves with a tablespoon of sour cream and diced shallots
