Spicy Moroccan White Fish with Sweet Peas
Ingredients - Serves 2
- 2 x 200g white fish fillets
- 3/4 cups couscous
- 1 Tablespoon olive oil
- 2 lemons
- 2 garlic cloves
- 1/2 cup frozen peas
- 425 grams canned tomatoes
- 1 teaspoon cinnamon sugar
- 1 teaspoon cumin seeds
- 1 small chilli , finely diced
- 1/4 cup basil finely diced
- Sea Salt, to taste
Methods
- Finely dice chilli and garlic and add to a pan along with 1 tablespoon of olive oil. Add the juice of one lemon, the canned tomatoes, cinnamon, cumin and basil. Lastely add you white fish fillets and peas. Add a lid to the saucepan and turn on the heat. Allow the mixture to simmer for 10 minutes
- Add the couscous, 1 lemon and a tablespoon of olive oil to a mixing bowl. Pour 1 1/4 cups of boiling water over the couscous and cover. Leave for 10 minutes until fish is cooked
- Serve with some fresh basil leaves over the top
