Salmon, Seasoned with Mango, Chilli and Black Bean Salsa
Ingredients - Serves 4
Salsa Ingredients
- 250 grams of black beans
- 1/2 mango
- 1/2 small red chilli
- 1 teaspoon Cumin
- 1 Tablespoon fresh coriander
- 1 cucumber
- 1 lime
- lime zest
- 1/2 red capsicum
- 1 tablespoon olive oil
- 1/2 red onion
- salt and pepper to taste
Methods
- Finely dice coriander, Chilli and red onion. Add medium diced mango, cucmber and capsicum. Add other salsa ingredients. Allow to rest whilst salmon is cooking
- Cook Salmon in fan ovan for 25-30 minutes at 190 degrees celcius
- Serve each Salmon piece with 2/3 cups of Salsa
