Nutritional Notes:

Salmon seasoned with chili mango salsa is a healthy option if you're looking for a smaller calorie meal. The salmon supplies a good source of protein and the black beans offer low GI carbohydrates and plenty of fibre to keep you feeling full and satisfied. There's a moderate amount of fruit sugar but the energy content is low, overall an "Eat Regularly" 83 out of 100

Salmon, Seasoned with Mango, Chilli and Black Bean Salsa

Ingredients - Serves 4

  • 4 x 200 grams Salmon

Salsa Ingredients

  • 250 grams of black beans
  • 1/2 mango
  • 1/2 small red chilli
  • 1 teaspoon Cumin
  • 1 Tablespoon fresh coriander
  • 1 cucumber
  • 1 lime
  • lime zest
  • 1/2 red capsicum
  • 1 tablespoon olive oil
  • 1/2 red onion
  • salt and pepper to taste


  • Finely dice coriander, Chilli and red onion. Add medium diced mango, cucmber and capsicum. Add other salsa ingredients. Allow to rest whilst salmon is cooking
  • Cook Salmon in fan ovan for 25-30 minutes at 190 degrees celcius
  • Serve each Salmon piece with 2/3 cups of Salsa
