Nutritional Notes:
The healthy lentil, is one of the best weight loss foods available. Lentils are packed with soluble fibre, protein and low GI carbohydrates all satiety creating factors for appetite control. Added to this lentil soup contains a healthy portion of vegetables and a piece of low GI Rye or multigrain bread. Overall a great weight loss meal with just 270kj's per 100 grams. An 88 out of 100

Lentil Soup
Ingredients - Serves 6
- 2 Tablespoons of Olive Oil
- 2 Onions
- 1 teaspoon diced Thyme
- 4 Celery Sticks
- 2 Medium Potatoes
- 2 carrots
- 6 Tomates
- 1.5 Litres of Chicken Stock
- 1 1/2 cups of Red Lentils
- 100 grams of Lean Ham
- 1 cup of Garden Peas
- 6 slices of Wheat or Rye Bread
Methods
- Dice Onions and Thyme
- Cut celery, carrots and pototos into small 1cm pieces
- Add Olive oil, diced Onions, Thyme, Celery and carrots to a large cooking pot and cook for 10 minutes of medium heat
- Boil potatos in a seperate put for 10 minutes
- Dice ham and tomatoes into small pieces
- Add ham, lentil, chicken stock, potato and tomato to onion mixture and bring to boil
- Reduce heat and simmer for 30 minutes
- Add a cup of frozen green peas and simmer a further 5 minutes
- Serve with 1 slice of toast
