With a weight loss score of 8 out of 10 you can eat a large serving of this one. This soup contains beans a weight loss superfood contain high amounts of fibre, with protein and low GI carbs. There is a low energy density along with a healthy serving of protein. Overall a great weight loss meal

Chicken, Pumpkin and Bean Soup

Ingredients - Serves 4

  • 30o grams chicken breast diced into 1cm x 3cm strips
  • 500g of butternut pumpkin cup into 1.5-2cm cubes
  • 1 finely chopped brown onion
  • 2 cloves of garlic
  • 400 grams borlotti beans
  • 1/4 bunch of silverbeet
  • 750 mls of chicken stock
  • 1 tablespoon of olive oil
  • 8 pieces of wholemeal or rye bread, toasted


  • Add olive oil, onion, chicken and garlic into a pan
  • Cook on medium heat until chicken is lightly browned, set aside
  • Add pumpkin and stock into a large pot, bring to boil and simmer for 15 minutes until pumpkin is cooked
  • Add silverbeet, beans and chicken mixture to pumpkin and cook for a further 2 minutes or until silverbeet is wilted
