Chicken, Pumpkin and Bean Soup
Ingredients - Serves 4
- 30o grams chicken breast diced into 1cm x 3cm strips
- 500g of butternut pumpkin cup into 1.5-2cm cubes
- 1 finely chopped brown onion
- 2 cloves of garlic
- 400 grams borlotti beans
- 1/4 bunch of silverbeet
- 750 mls of chicken stock
- 1 tablespoon of olive oil
- 8 pieces of wholemeal or rye bread, toasted
Methods
- Add olive oil, onion, chicken and garlic into a pan
- Cook on medium heat until chicken is lightly browned, set aside
- Add pumpkin and stock into a large pot, bring to boil and simmer for 15 minutes until pumpkin is cooked
- Add silverbeet, beans and chicken mixture to pumpkin and cook for a further 2 minutes or until silverbeet is wilted
