Cheesy Meatballs with Steamed Vegetables
Ingredients - Serves 4
- 500 grams lean beef mince
- 1 Brown Onion
- 2 Tablespoons fresh basil
- 1 Egg
- 500 grams fresh tomatoes
- 1 zucchini
- 1 carrot
- 2 celery stalks
- 100 grams tasty cheese
- 1/4 cup of plain flour
- 2 beef stock cubes
- 2 corn cobs
- 1 cup of peas
- 2 small potatos
- 4 broccoli stalks
Methods
- Dice onion and basil. Add to mince, egg and flour in a mixing bowl. Create small balls from mixture
- Heat 1 Tablespoon of oil in a pan. Add meatballs and cook until brown rotating every few minutes. Set aside
- Add 1 Tablespoon of olive oil along with diced zucchini, carrot and celery to a pan. Cook for 5 minutes until celery softens. Add tomatoes, 1 cup of water and beef stock cubes. Add meatballs and simmer for 25 minutes
- Meanwhile peal and dice vegetables. Steam for 20 minutes until cooked
- Add grated cheese
- Serve along with vegetables
